During conversations, be attentive always. Let your date feel that you are interested in her, that your eyes and ears are all for her. She can be animated in telling stories about her work and the things she takes pride in; encourage her to tell more about herself without interrupting her. You will have your turn after she's done. A good conversation starts and ends with two good ears and one cautious mouth.
